Peanut Butter Roll
Try this amazing peanut butter roll. If you like jelly rolls then this is exactly what you need.
So creamy and delicious, it’s sure to satisfy your taste buds.
I can remember as a kid i use to love the chocolate rolls with white cream in the middle. Now that I’ve tried these awesome rolls, they are now my favorite.
1 cup granulated sugar
1/3 cup water
1 tsp. vanilla
3/4 cup all purpose flour
1 tsp. baking powder
1/4 tsp. salt
About 2/3 cup peanut butter
Chocolate glaze (below)
Heat oven to 375 degrees
Line jelly roll pan, 15 1/2 x10 1/2 x1 inch, with aluminum foil or waxed paper and grease generously
Beat eggs in small mixer bowl on high speed until very thick and lemon color, about 5 minutes
Pour eggs into large mixer bowl
Beat in granulated sugar gradually
Beat in water and vanilla on low speed.
Add flour, baking powder and salt gradually, beating just until batter is smooth and then our into pan
Bake until wooden pick inserted in center comes out clean, about 12-15 minutes
Immediately loosen cake from edges of pan and invert onto towel
Carefully remove foil and trim off stiff edges of cake if necessary
While hot, carefully roll cake and towel from narrow end.
Cool on wire rack at least 30 minutes
Unroll cake and remove towel
Beat peanut butter slightly with fork to soften and spread over cake
Roll up and pour on chocolate glaze
This will serve about 10 people
2 squares unsweetened chocolate
3 tbsp. peanut butter
1 cup powdered sugar
3/4 tsp. vanilla
About 2 tbsp. hot water
Heat chocolate and peanut butter over low heat until melted
Remove from heat and stir in powdered sugar and vanilla
Stir in water, 1 tsp. at a time, until glaze is of desired consistency
This will glaze one 8 or 9 inch layer.
Want to make it a peanut butter and jelly roll? Just add jelly on top of your peanut butter. Mmmm i can almost taste it now.
